Spurred through a combination of experiences helping his parent's forays into the food industry, William started his own meat market business around 1902, calling it Sasse & Son. I believe he was the "Son," with his father being the "Sasse," likely supplying beef and other meats for William to sell.

It would prove a long-running business, closing some time after 1935 but before William's death in 1943.

The building is now part of the Gold Dust Casino & Hotel, roughly beside the Mavericks Steak & Cocktails restaurant.
